CHAI Mango MINT & Pomigrante Lollies

Ice lollies are back in fashion like mom jeans and crop tops! 


Makes about 12-16 lollies Ingredients: 
1 cup chia seeds 
1 tin coconut milk 
1 tbsp honey 
1 mango peeled and cubed 
1/4 cup pomegranate seeds.
72 mint sprigs leaves picked .

Method:
1. In a large bowl add the chia seeds and cover with the coconut milk, leave to swell the chia seeds will swell and double in size,
2. In the meantime peel the mango and cut into squares of about 0.5cm.
3. add the mango, mint leaves, pomegranate seeds and honey to the mixture and stir it well.
4. Divide the mixture into the lolly molds, and freeze for 4 hours or overnight.  


MANGO and Chickpea Pizza

Serves 4
Ingredients:
2 pre-made rolled pizza dough
3 tbsp tomato paste
2 ripe mangoes, peeled and cut into thin sliced
2 small red onion, finely sliced
1 tin 400g chickpeas, drained
2 tsp paprika powder
2 tsp curry powder
1 tsp cumin powder
coriander
greek yogurt
olive oil

Method
1. Roll out the pizza dough out into two large rectangles.
2. Preheat the over to 160°C/gas mark 3. Divide the tomato paste between the two bases and spread evenly over the pizza base leaving a 1cm rim around the base.
3. Evenly spread the onion and mango slices across the pizza base, add the chickpeas to the two basses.
4. Mix the paprika, curry powder, and cumin powder in a bowl and sprinkle over the pizza base. Season with salt and pepper.
5. Bake at 160°C for 15-20 min, until the rim of the base, is golden brown.
6. Season greek yogurt with salt and pepper drizzle with olive oil and use as a dipping sauce.
7. Garnish with fresh coriander.
