CHAI Mango MINT & Pomigrante Lollies

Ice lollies are back in fashion like mom jeans and crop tops! 


Makes about 12-16 lollies Ingredients: 
1 cup chia seeds 
1 tin coconut milk 
1 tbsp honey 
1 mango peeled and cubed 
1/4 cup pomegranate seeds.
72 mint sprigs leaves picked .

Method:
1. In a large bowl add the chia seeds and cover with the coconut milk, leave to swell the chia seeds will swell and double in size,
2. In the meantime peel the mango and cut into squares of about 0.5cm.
3. add the mango, mint leaves, pomegranate seeds and honey to the mixture and stir it well.
4. Divide the mixture into the lolly molds, and freeze for 4 hours or overnight.
