Honey THYME carrots.

3 packets baby carrots, (I used the ones from Woolworths/Spinneys that has the tops still on)
1/4 cup honey 
2 Tbs Olive oil
4 springs fresh thyme 

1. Toss the carrots in the honey and thyme leaves 
2. Heat the pan with the oil add the carrots to the pan and fry on medium-high soft. 

RICOTTA and Thyme CHICKEN Drumsticks

serves 4


500g good quality chicken drumsticks with skin
3 tbsp fresh thyme leaves
120g ricotta cheese 
2 tbsp honey 
3 tbsp olive oil
juice of 1 lemon 
sesame seeds as needed
salt to taste
black pepper to taste   


1.  In a bowl, mix together the thyme, ricotta, honey and season with salt and pepper. 
2.  Carefully tear the skin of the chicken slightly away from the chicken flesh and insert a small spoonful of the ricotta mix into the skin opening, essentially stuffing the chicken leg with the ricotta filling. Repeat with all the chicken pieces. 
3.  Place the chicken pieces on a baking tray, brush with the olive oil and drizzle with honey, lemon juice and season with salt and pepper 
4.  Bake at 180°C or gas mark 4 for 20-30 minutes until golden brown and cooked through.
